This is the classic recipe for Rice and Milk Soup, also known as milk soup by some of the locals. In Puerto Rico, we call it Sopa de Arroz con Leche (sopah deh ah-ross conn lecheh). As children, some of the grannies prepared it and made them a bit sweeter than usual for breakfast, or just to make us feel good. If you’ve ever tried, we hope it brings fond memories.

Bacalaitos (Cod Fritters)

Puertorican Bacalaitos Recipe

Bacalaitos (BACK-AL-EYE-IT-OZ) is a simple batter mixture made with salted cod and spices. Visually similar to the one used for making pancakes, however it is fried in a thin layer of vegetable oil, resulting in delicious crunchy edges and softer center.  The best way to make  great bacalaitos is by using a deep and cured iron pot on an open, mesquite-wood-fire, allowing to drain after frying under the heat and smoky aroma of the burning mesquite.
