Rice and Milk Soup Recipe

This is the classic recipe for Rice and Milk Soup, also known as milk soup by some of the locals. In Puerto Rico, we call it Sopa de Arroz con Leche (sopah deh ah-ross conn lecheh). As children, some of the grannies prepared it and made them a bit sweeter than usual for breakfast, or just to make us feel good. If you’ve ever tried, we hope it brings fond memories.
Ingredients
- 1 cup of short-grain rice
- 7 + 1½ cups of water
- 2 cups of milk (preferably whole)
- 1 tablespoon of sugar (or to taste)
- 2½ tablespoons of salt (or to taste)
Instructions
- Soak rice in 1½ cup cold water for 10 minutes.
- Using a strainer, discard the water and pour the rice in a stock pot, big enough to hold 4.5 quarts.
- At medium-high heat, add 7 cups water to the pot with the rice and boil until the water evaporates and reduces to a point where the rice is almost twice its size and very tender.
- Add milk, sugar, salt and mix well.
- Taste and adjust with sugar or salt (to taste).
- Continue boiling for 10 to 20 minutes while moving the rice with a wooden spoon.
- Remove from heat.
- Served it nice and hot.
