Grains from Humacao are deep fried, rice flour and cheese rolls. The name Grains (Granos) is given because they resemble the shape of enlarged rice grains and since this recipe is typical from the municipality of Humacao, Puerto Rico, hence the name “Granos de Humacao”.  Delicious and very popular, these are great very early in the morning with a nice cup of coffee.

Ingredients

  • 3 cups Short Grain Rice (finely ground)
  • 1 cup Parmesan Cheese (grated) (optional)
  • 4 cups water
  • 2 tbsp Butter
  • 1 tsp Salt (or to taste)
  • ½ tsp Sugar
  • 1,  8oz block Sharp Cheddar Cheese

Directions

    1. In a blender or food processor, grind the rice until you achieve a cornmeal-like consistency.
    2. Combine and mix rice flour with Parmesan cheese.
    3. In a saucepan over medium-high heat, pour water, salt, sugar, butter and bring to a rolling boil.
    4. While stirring with a wooden spoon, gradually and slowly add the rice flour mixed with parmesan cheese.
    5. Continuing mixing until a dough forms.
    6. In order to avoid lumps, make sure to constantly stir the mix.
    7. Remove the saucepan from the heat and let it cool down at room temperature for several hours.
    8. Cut cheddar cheese into ½ inch long and ¼ inch wide sticks.
    9. Sp the dough doesn’t to stick to your hands, moisten your hands with water before handling the dough.
    10. Place 1-2 tablespoons of dough in your hands, roll it no wider than your palms, forming the shape of a “canoe”.
    11. Place a cheese stick inside the “canoe”, then close the roll to cover the cheese with rice dough, giving the shape or an enlarged rice grain. There should be no cheese left exposed.
    12. Fry over high heat and enough oil to cover the “grain”.
    13. Fry until golden and toasty.

Note: Some like the gold (or light) toasting and others quite dark. We suggest you try several terms to find your favorite.T

Tip: You can also use a banana leaf to shape the grains without them sticking to your hands.
