Cassava Mofongo

This cassava mofongo (Mofongo de Yuca) recipe is a favorite in our family to stuff roasted turkeys, chickens and other poultry.
Ingredients
- 2 pounds cassava root (peeled & boiled)
- 4-6 garlic cloves (minced)
- Pinch of cilantro (optional, to taste)
- ½ cup olive oil
- 1 pinch of salt
Procedure
- Mash the boiled cassava (removing all stems).
- Add minced garlic and continue mashing and mixing while gradually adding olive oil.
- Make sure it remains moist if using as stuffing since it will tend to dry while baking.
- Use little or no salt because the filling will acquire the salt you use as a marinade for your poultry.
