Pumpkin Flan

A great puerto rican meal can’t end without a delicious homemade flan. Flan is really a custard and puerto ricans have plethora of techniques to prepare it. Regardless of softer or harder consistencies, one thing for sure, this is a favorite dessert. Now that we are nearing the holiday seasons, making this recipe is not a bad idea.
Ingredients (Caramel)
- 1 cup of sugar
- 2 tablespoons of water
Procedure (Caramel) (Quick Version)
In a microwave-resistant cup, mix the sugar with water and cook in the microwave, over high temperature for 5-7 minutes. Pour the caramel into the mold you will use for your flan.
Ingredients (Flan)
- 1 cup of pumpkin (peeled, seeded, boiled and mashed)
- 1¾ cups of sugar
- 1 can of evaporated milk
- 1 small cal of condensed milk
- 3 to 5 eggs
- 1 teaspoon of real vanilla extract
- Pinch of salt
Procedure (Flan)
- Preheat your oven to 350º.
- In a blender, add all of your ingredients and mix at medium speed for about a minute, until you can see some foaming on top of the mix.
- Add the mix to the caramelized mold you previously prepared.
- Place the mold inside a larger mold with water in order to make your own bain marie.
- Loseley cover the mold with foil paper.
- Place the bain marie inside the oven and bake for 1 hour.
- To check if your flan is ready, insert a clean knife in the middle of the flan. If it comes out dirty, your flan needs more time inside the oven, if it comes out clean, your flan is ready.
- If ready, remove the flan from the oven and let it cool down for a few minutes.
- To serve, carefully place the serving dish over the flan mold, flip the flan mold quickly but carefully.
- Remove the flan mold.
- Your flan is now ready to present and serve.
