Puerto Rican Quesitos Recipe

These “quesitos” (keh-see-tohs) are one of the most delicious and memorable puff pastries from Puerto Rico. Want to prepare your own? Here is a quick and easy recipe to prepare these great treats.
Ingredients
- 1 puff pastry sheet. Preferably Pepperidge Farm. These are commonly available frozen area in most supermarkets and two sheets are included in each package.
- 1 stick 8 ounces of cream cheese.
- 1 cup of sugar.
- Additional ½ cup sugar.
- Egg white from 1 egg.
- ½ cup of honey.
Instructions
- Preheat oven to 350 ° f
- Soften cream cheese at room temperature.
- Mix cream cheese and 1 cup sugar until well combined.
- Beat egg whites with ¼ cup honey until they foam. Do not discard the rest of the honey.
- Cut the pastry sheets into 3 x 3 squares. If you use the dough we recommend, they should yield about 9 squares of equal size.
- Pour a tablespoon of cream cheese from corner to corner on each square.
- To roll, first place one corner over the cheese filling.
- Using a brush, add some egg white and honey to the first corner you’ve just folded.
- Now fold the other corner to overlap and cover the corner you just washed with egg white and honey.
- Once rolled, brush the entire outside of the pastry with egg white and honey.
- Sprinkle the egg white and honey covered pastry with sugar.
- Using a cookie sheet, place a sheet of parchment paper.
- Place the pastries on top of the paper.
- Repeat this process until you’ve completed all of the squares.
- Bake for 20 minutes or until golden brown (as pictured).
- Remove from oven and let cool to room temperature.
- Optionally, you could caramelize more and make it gooey by brushing a thin layer of pure honey over the pastry while still in the oven .
