Grouper Fritters Recipe

Ingredients
- 1 pound grouper fillet (clean)
- ½ cup flour
- ¼ teaspoon dried oregano
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 2 eggs, beaten
- 1 cup shredded fried root vegetable chips.
- Preferably homemade but Terra chips will do.
- It also works if you only use fried plantain chips.
- ¼ cup powdered export soda crackers
Directions
- Add onion powder, garlic powder and oregano to flour and mix well.
- Mix the powdered crackers with shredded root vegetable chips.
- Cube the grouper (1 or 2 inches).
- Season the grouper with salt and pepper.
- Bread the grouper with the mixed flour & spices.
- Place the breaded grouper inside the bowl with beaten eggs.
- Crust the grouper again with the powdered crackers mixed with fried root vegetables chips.
- Fry in enough vegetable or coconut oil at medium-high temperature for 2 minutes each side (approximately).
- Remove from fryer and drain excess oils (by placing the fritters on paper towel).
