Ingredients

  • 1 pound grouper fillet (clean)
  • ½ cup flour
  • ¼ teaspoon dried oregano
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 2 eggs, beaten
  • 1 cup shredded fried root vegetable chips.
    • Preferably homemade but Terra chips will do.
    • It also works if you only use fried plantain chips.
  • ¼ cup powdered export soda crackers

Directions

  1. Add onion powder, garlic powder and oregano to flour and mix well.
  2. Mix the powdered crackers with shredded root vegetable chips.
  3. Cube the grouper (1 or 2 inches).
  4. Season the grouper with salt and pepper.
  5. Bread the grouper with the mixed flour & spices.
  6. Place the breaded grouper inside the bowl with beaten eggs.
  7. Crust the grouper again with the powdered crackers mixed with fried root vegetables chips.
  8. Fry in enough vegetable or coconut oil at medium-high temperature for 2 minutes each side (approximately).
  9. Remove from fryer and drain excess oils (by placing the fritters on paper towel).
