Fried Rice Recipe

Do you have day old, white rice leftovers and don’t know what to do with it? Don’t discard it! This Puerto Rican style fried rice recipe that Elizabeth shared with us is absolutely delicious and easy to prepare. We have tried it and it was so good, there were no leftovers.
Ingredients
- 2 tablespoons vegetable oil
- 3 scallions (chopped)
- 1 tablespoon powdered ginger
- ½ green pepper (diced) (optional)
- ½ red pepper (diced) (optional)
- 1 pound peeled and deveined shrimp
- Thick ham (cubed) (to taste)
- 4 cups white rice (precooked)
- 1 tablespoon oyster sauce
- Soy sauce (to taste)
- 3 to 4 eggs (cooked/scrambled)
- Lettuce (to taste) (chopped)
Instructions
- In a large pot over high heat; heat the vegetable oil and saute the scallions, powdered ginger and peppers until they are lightly caramelized.
- Add the shrimp and ham.
- Mix and stir-fry until shrimps are cooked.
- Add the rice and mix well with all other ingredients already in the pot.
- Add the oyster sauce and soy sauce.
- Keep moving and stirring constantly.
- Add the scrambled eggs and mix well with the rest of the ingredients.
- Add the chopped lettuce and mix.
- Turn off the heat and leave the pot covered until ready to serve
NOTE: You can replace the shrimp for boneless pork, chicken and/or favorite vegetables.
