Puerto Rican Sofrito

Sofrito is a sauce used as a base for puerto rican cooking. Preparations may vary, but it typically consists of aromatic ingredients.  You can prepare the sauce ahead of time and freeze it using ice cube trays for later use.

Ingredients

  • 3 red peppers (seeded)
  • 3 medium onions (chopped)
  • 4 garlic bulbs (peel all garlic cloves)
  • 12 sweet peppers (ají dulce or mild cachucha) (seeded)
  • 10 fresh coriander/culantro leaves (recao)
  • 25 fresh cilantro leaves
  • 5 large & fresh thick thyme leaves (oregano brujo)
  • 1 tablespoon salt
  • ¼ cup annatto oil (or to taste).
    • You may replace annatto oil with 1/4 cup of light virgin oil and a packet of Spanish seasoning (sazón) with annatto (achiote).

Procedure

  1. Mix all ingredients and coarsely chop them using a blender or food processor.
  2. Mix them until you gain the desired consistency.
  3. It’s a matter of taste, whether you like your sofrito thick and chunky or thin and liquid.
  4. Pour the mixture in ice cube trays for easy use and perfect measure for your recipes.
  5. Freeze the sofrito you are not using!
  6. We highly recommend thoroughly covering the ice cube trays so your freezer doesn’t get overpowered with the odor of sofrito.

Remember:

1 cube of frozen sofrito is good enough for 1 cup of beans or 2 cups of rice. However, if you like your dish to have a stronger taste, it is entirely up to you!
