Plantain Canoe Recipe

The combination of sweet, salty and cheese puts this plantain canoe on the top of our personal favorites. In Puerto Rico, we call this Canoa de Platano (Can-O-Ah, Deh, Plat-Ah-No). Not only delicious and easy to pair with other sides, but it is extremely easy to prepare. We can not deny that textures and flavors make it unique and spectacular.
Ingredients
- 2 ripe plantains (yellow and large)
- 1 cup of your favorite chopped meat (picadillo)
- ½ cup shredded mozzarella or cheddar cheese
- Butter (to taste)
You may opt to omit the meat and make it only with cheese.
Instructions
- Prepare your favorite chopped meat recipe (picadillo).
- Preheat oven to 375°f.
- Cut both ends of the plantain.
- Cut a deep incision along the inside of the plantain without crossing the outside (lengthwise end to end). This would be the opening of the canoe.
- Add butter to the incision and the rest of the banana, including the peel.
- Bake until the peel changes color and opens up like a canoe.
- When ready, the peel should come off easily and plantain should be tender but still juicy.
- Fill the canoe with your favorite chopped meat (picadillo) and top with cheese.
- Place the canoe on a baking sheet and bake inside the oven until the cheese melts.
