Pistachio Coquito

Coquito is the ever popular coconut milk punch. It’s like an eggnog but with an islander twist and a spirited kick. This is a very easy to make drink and great choice, especially during the holiday season. Pistachio Coquito, the title pretty much describes how exquisite this drink really is.

Ingredients
- 2 cups Pistachio Ice-Cream
- ¼ crushed Pistachio Nuts
- 1 can (14 oz) Coconut Cream
- 1 can (12 oz) Evaporated Milk
- 2 cups Puerto Rican Rum
- 3 tbsp sugar
Directions
- In a blender, mix the sugar and coconut cream until very smooth.
- Mix with the rest of ingredients.
- Pour into a glass bottle and refrigerate.
