Puerto Rican Coquito

Puerto Rican Coquito is the ever popular coconut milk punch. It’s like an eggnog but with an islander twist and a spirited kick. This is a very easy to make drink and great choice, especially during the holiday season.

Ingredients

  • Meat from  1 dried coconut
  • 2 cups very hot Water
  • 1 can (14 oz) Condensed Milk
  • 1 can (12 oz) Evaporated Milk
  • Ground Cinnamon (to taste)
  • Puerto Rican Rum (to taste)
  • 2 Egg Yolks

Directions

  1. Cut coconut meat into chunks that will fit inside a blender.
  2. Place in a blender with very hot water and blend at high speed until it turns into a milk.
  3. Using a clean cotton or cheesecloth, squeeze the mixture until you gain 3 cups of coconut milk.
  4. Mix the coconut milk with the remaining ingredients.
  5. Mix well to ensure egg yolks are well mixed.
  6. Pour into a glass bottle and refrigerate.

NOTE: Making your own coconut milk is not an  easy task and in some places, dried coconuts are not easy to come by. Instead, replace the meat and whole squeezing process with 3 cups of canned coconut milk.
