Puerto Rican Pineapple Syrup Recipe

This pineapple syrup recipe is, in our opinion, the ideal to make the famous puerto rican wedding, bride or birthday cakes, giving them that amazing moist texture and flavor.  However, you could also use this recipe as a glaze for other dishes like BBQ poultry or seafoods.

Ingredients

  • 2 cups of pineapple juice
  • 1 cup of white, granulated sugar
NOTE: If you can make or find fresh pineapple juice, that would be even better.  Otherwise, we prefer (in the island) to use the Lotus brand.

Instructions

  1. Add two cups of pineapple juice to a saucepan over medium heat.
  2. When the juice is hot or has lightly reduced (lightly evaporated), add the sugar gradually while moving the juice using a wooden spoon.
  3. After adding the sugar, lower the heat to low or medium-low.
  4. If using for cakes, the syrup should be very liquid so that it can penetrate the cake. If you leave the heat too high, the syrup will begin to either thicken and/or crystallize and will not penetrate the cake properly.
  5. If using as a glass for a protein, then it’s OK to make it a bit thicker so it can be brushed while cooking.
  6. Once it has reached the desired consistency, remove the saucepan from the heat and use as intended.
