This cassava mofongo (Mofongo de Yuca) recipe is a favorite in our family to stuff roasted turkeys, chickens and other poultry.

Ingredients

  • 2 pounds cassava root (peeled & boiled)
  • 4-6 garlic cloves (minced)
  • Pinch of cilantro (optional, to taste)
  • ½ cup olive oil
  • 1 pinch of salt

Procedure

  1. Mash the boiled cassava (removing all stems).
  2. Add minced garlic and continue mashing and mixing while gradually adding olive oil.
  3. Make sure it remains moist if using as stuffing since it will tend to dry while baking.
  4. Use little or no salt because the filling will acquire the salt you use as a marinade for your poultry.
