Coquito is the ever popular coconut milk punch. It’s like an eggnog but with an islander twist and a spirited kick. This is a very easy to make drink and great choice, especially during the holiday season. The Almond Coquito recipe delivers a delicious end to any meal as a dessert beverage.  You can also make this recipe alcohol-free for the little ones to enjoy.

Ingredients

  • 1 cups Pistachio Ice-Cream
  • ¼  crushed Pistachio Nuts
  • 1 can (15 oz) Coconut Cream
  • 1 can (14 oz) Condensed Milk
  • 1 can (12 oz) Evaporated Milk
  • 1 oz Almond Liqueur (Like Amaretto)
  • 1 cup Puerto Rican Rum (optional)
  • 1 tsp Vanilla Extract
  • 1 tsp Cinnamon (powdered)

Directions

  1. In a blender, mix all ingredients at low speed.
  2. As an alternative, you can mix in a large bowl using a wooden spoon.
  3. Make sure all ingredients are well mixed.
  4. Pour into a glass bottle and refrigerate.
